Seven paid employees oversee food preparation seven days per week, three meals per day. These employees prepare over 2,100 meals daily and supervise approximately fifteen volunteer pre-trial inmate kitchen workers per shift for two shifts beginning at 0300 hours seven days per week, 365 days a year.

   

A total of 938,238 meals were served during FY 2006 at a cost of $1,137,952.09, excluding personnel costs resulting in an average cost of $1.21 per meal. Currently, there are seven paid employees who oversee the daily operation of the kitchen at a cost of $179,876, bringing total expenditures to $1,317,828.09 at a cost of $1.40 per meal.
